These Classic No Bake Oatmeal Cookies are the perfect easy, delicious treat!

Whether it's too hot to turn on the oven or you're in a pinch for time, these no bake cookies are a great option!

These cookies don't use the oven and take only 10 minutes to prep. Just slap them on the parchment paper and wait for them to set up. If you love no bake desserts - this Best Ever No Bake Cheesecake and Easy No Bake Peanut Butter Pie are both delicious!

Ingredients for No Bake Oatmeal Cookies

To make no bake oatmeal cookies you'll need:

  • salted butter
  • white sugar
  • milk
  • salt
  • unsweetened cocoa powder
  • creamy peanut butter
  • quick cook oats

How to Make No Bake Oatmeal Cookies

  1. Prep  - Line two cookie sheets with parchment paper.
  2. Make the chocolate mixture - Melt the butter in a saucepan, then add the sugar, cocoa powder, salt, and milk. Stir well and bring to a boil. Add the peanut butter and stir until melted.
  3. Make the cookies - Using a cookie scoop or measuring cup, portion out the cookies on the baking sheet.
  4. Cool - Let the cookies sit and cool for 20 minutes or until hardened. Enjoy!

Substitutions for No Bake Cookies Recipe:

Butter: Butter is essential to this recipe. We haven't tried it with dairy free butter but it might work!

Sugar: We don't recommend substituting white sugar unless you have to, but White sugar can be used interchangeably with brown sugar. You can add 1 teaspoon of molasses to white sugar to make brown sugar. Check out this post on Sugar Substitutes for Baking for other ideas.

Milk: You can substitute milk with half and half, low fat milk or non dairy milk.

Cocoa Powder: You can't substitute cocoa powder in this recipe. Cacao power might work but would be bitter. Hot cocoa powder is not the same as cocoa powder

Peanut Butter: You can substitute cashew butter or almond butter in place of peanut butter.

Quick Cook Oats: Quick cook oats soak up liquid well and turn to the perfect texture for a cookie. Old Fashioned oats will not be as tender and will be dry. Steel Cut Oats absolutely will not work.

How to Store No Bake Oatmeal Cookies Recipe:

Storing: You can store these no bake oatmeal cookies for up to 4 days in an airtight container at room temperature. These cookies can be stored in the fridge in a sealed container for up to 2 weeks.

Freezing: You can freeze no bake chocolate peanut butter cookies for up to 3 months in an airtight container. Thaw completely before enjoying.

Reheating:  I don't suggest forcibly heating these cookies as they may fall apart and become gooey. The best route is to remove them at least half an hour before consuming. This will give them time to warm up on their own.

No-Bake Oatmeal Cookies FAQ

Why are my No Bake Cookies not setting?

If your no bake cookies aren't setting, you might not have enough oats to match the amount of chocolate mixture you have. If it seems extra wet, add a bit of oats to soak up the excess. You could've also added too much butter, or the cookies may just simply need more time to set.

How do you harden No Bake Cookies?

No-bake cookies will harden themselves if you have made them properly. You don’t have to put them in the fridge or freezer, or do anything special to get them to harden. They will naturally do so on their own and it shouldn’t take any longer than 20 minutes.

Ingredients

  • 1 cup salted butter (2 sticks)
  • 1 ½ cups white sugar
  • ½ cup milk
  • ½ teaspoon salt
  • ¼ cup unsweetened cocoa powder
  • ½ cup creamy peanut butter
  • 4 cups quick cook oats

Instructions

  • Line two cookie sheets with parchment paper.
  • In a saucepan over the stove, melt the butter.
  • Add the sugar, milk, salt, and cocoa powder. Mix well and bring to a boil.
  • Add in the peanut butter and when it’s almost melted, remove the pot from the heat, and continue to stir until there are no peanut butter streaks.
  • Add your oats to a large bowl and pour the liquid mixture over the top. 
  • Stir until oats are fully coated.
  • Using a round ¼ measuring cup, fill it about ¾ of the way full and place it on the prepared cookie sheets. Use the flat bottom to lightly press it down and round it. A large cookie scoop would work as well.
  • Let sit for about 15-20 minutes or until solidified. Enjoy!

      Not sure what you're asking! This recipe calls for 1/4 cup cocoa powder
